METHOD

Place ingredients into a mixing bowl fitted with a whisk, mix until a smooth paste is formed. Whisk for 6-8 minutes on fast speed. To ensure an even texture, mix for a further 45 seconds on slow speed.

Scale As required for sponges.

Bake At 170 - 190°C (350-375°F) for 15- 25 minutes depending on oven and size of product.

1.5oz per lb, this will allow for the Cocoa powder absorbing moisture.

SWISS ROLLS

Mix to a smooth paste on slow speed, then whisk for 4 mins on fast speed. To ensure an even texture mix for a further 45 seconds on slow speed.

Bake at 220 - 250°C/430-460°F depending on the oven and weight of product for approximately five minutes.
