Mix ingredients "A" on a planetary mixer with a beater, for one minute slow and three minutes medium speed, scrape down.

Add ingredients "B" over one minute, on slow speed, scrape down, and then mix for three minutes, on slow speed until the mix is smooth. Add flavours as required.

Scale at 85g/3oz into American Muffin paper cases and tins. Sprinkle each Muffin with coarse granulated sugar before baking. Bake at 180 - 200°C/360-390°F for 30 minutes approx. depending on oven.

The Blueberries must be frozen and hard when they are added to the batter, use minimal mechanical mixing. Scale the blueberry batter immediately into prepared muffin cases and tins. Bake at once.

Coat the blueberries with a small amount of bread flour whilst frozen to seperate them and make it easier to incorporate into the batter.

Chocolate Flavoured Muffins

Add 1kg - 125grms (2lb - 7.5oz) per bag and increase water by 1kg - 687grms (3lb - 11oz)
