Dough temperature 25-28°C

METHOD

Using a spiral mixer, mix for 2 minutes slow and 6 minutes fast.

Rest for 10 minutes, then mould into the required shape for doughnuts or buns.

Proof time is between 35-55 minutes depending on size with a temperature of approx 35°C with 80% humidity. Fry for approx. 90 seconds each side.

BAKING

Oven temperature 200 - 210°C/400-420°F with low bottom heat

Baking time 15-20 minutes depending on size.

Allow to cool and finish as required.
