Batter temperature 18-22°C

METHOD

Using a planetary mixer fitted with a beater, add two thirds of the water and oil to the carrot cake mix and mix for 1 minute on slow speed and 3 minutes on medium speed.

Add remaining water over 2 minutes on slow speed, scrape down and mix for a further 3 minutes on slow speed.

Leave to stand for 20-30 minutes to ensure the carrot is rehydrated.

Scale into 1 lb loaf tins at 350 g or into a 30 x 18 inch tray at 5 kg of batter.

BAKING

Oven temperature 180 / 360°F

Baking time 25-45 minutes depending on size.
